In this issue of Exploratorium Quarterly we will examine food, that everyday essential part of our lives that we need to live and live to eat. We will explore the composition and structure of food, and unique properties of certain foods, as well as taking an in-depth look at the science of digestion and taste. Included is an interview with a former NASA astronaut about eating habits in space, and a look at the unique place food holds in our social lives.
